Quinoa Baobab Bread
- Quinoa - uncooked (300g)
- Chia or Flax Seed (60g)
- Baobab (1tbspn)
- Water (1/4 cup)
- Cold-press Coconut oil or olive oil (1/4 cup)
- Baking Soda 1/2 tspn
- Sea salt 1/2 tspn
- Lemon Juice (1/2 lemon)
Soak 300g of quinoa in plenty of cold water and store in the fridge over night, also soak the flax or chia seeds in 1/2 cup of water and store in the fridge for over night
Preheat oven to 180C or 350 F
Wash the quinoa well, then add the quinoa into a food processor. Add either your chia or flax seed mix, baobab, lemon juice, sea salt, baking soda and coconut oil into the food processor
Mix all the ingredients in a food processor for 3 to 5 minutes until the batter has the consistency of a dough, then spoon it into a loaf tin lined with baking paper.
Bake for 1 and 30 minutes to 2 hours, checking periodically. The bread needs time to cook for the quinoa to be tender.
When it’s ready, remove the bread from the oven for 30 minutes and let it cool in the tin. Then remove from the tin and let it cool for another 30 minutes. Let it cool completely before eating.
