Fonio Grain Popsicle

Fonio Grain Popsicle

Fonio is not a new grain. it's probably one of the oldest grain. Many communities have been cultivating it for 5,000 years in West Africa. This is almost the lifespan of an average baobab tree. What excites me about Fonio, is that its the crop of the future. It grows very well in sandy, poor, and acid soil. It needs very little water to thrive, and grow. It's root system fights soil erosion and prevent desertification.

INGREDIENTS:

  • 3 cups of oat milk; 1/4 cup of Adda Blooms Fonio; 1 tsp of cinnamon powder; 1 tbsp of brown sugar; 2 tsp of vanilla extract; 1 tbsp of shredded coconut

DIRECTIONS:
  • Bring oat milk to boil. Stir in Fonio grain and cinnamon and cook. Stir occasionally until Fonio is thickened and cooked.
  • Stir in vanilla extract and brown sugar. Let it simmer until the Fonio has absorbed all the liquid. Remove from heat, stir in shredded coconut and let it cool.
  • Transfer mixture into popsicle molds and freeze.
