Vegan Buddha Bowl With Avocado Dressing

INGREDIENTS:

  • 1 cup of Adda Blooms Oryza Glaberrima rice (remove husk and soak rice overnight); 2 and half cups of vegetable broth; 1 1/2 tbsp of chopped onion; 1 tbspn of olive oil; plant based butter (optional); cherry tomatoes; radish; radicchio; avocado; and carrot

DIRECTIONS:

  • Heat oil in a pan over medium heat, add onion and sauté until tender
  • Add rice and vegetable broth and cook together until tender
  • Add butter and fluff with a fork
  • Transfer rice to a bowl, add all the vegetables. Top with sesame seeds and cilantro
  • Drizzle avocado dressing and serve
