Bambara Beans Festive Salad

Bambara bean has been known as a rare examples of a complete food. It is said to have such an excellent balance of nutrition that people supposedly survive on it alone. It can be boiled, roasted, fried, and even grounded into flour. The seed is said to be roughly 60 percent carbohydrate, 20 percent protein, and 7 percent oil. Additionally, the protein contains more of the nutritionally essential amino acid methionine than almost any other bean. This crop deserves careful cultivation, preservation, and should become a part of everyday plant based food.
INGREDIENTS:
- 2 ½ cups Adda Blooms Bambara Beans (cooked); ¼ cup olive oil; 1 whole lemon juiced; ¼ chopped onion; ¼ cup chopped tomatoes; 1 tbsp Dijon mustard; 2 ½ tsp honey ¼; chopped scallions; ¼ cup chopped parsley; 1 tsp minced garlic; 1 tsp cumin; Pinch of salt; and black pepper
DIRECTIONS:
- In a salad bowl, combine cooked Bambara beans, onions, scallions, minced garlic, and parsley. 2. In another bowl add olive oil, lemon juice, Dijon mustard, honey, salt, black pepper, and cumin. Whisk together and pour over salad mixer.
